What it is

Aachi Masala was founded in 1995 by A.D. Padmasingh Isaac and is headquartered in Chennai, where the brand is known for South Indian spice blends. This pack is the batter for bajji and bonda, already seasoned.

It is mostly Bengal gram flour, with rice flour for crispness, plus chilli, turmeric, hing, salt and a raising agent, so all you add is water. A thick batter coats sliced vegetables for bajji; a slightly thicker one wraps spiced potato balls for bonda. Choosing between batters? This mix when you want it ready-seasoned; plain Aashirvaad besan when you season your own, or for pakoda and kadhi.

Tip: Slice onion and plantain about as thick as a coin. Thinner burns before the batter sets; thicker stays raw in the middle.
