What it is

Aachi Masala was founded in 1995 by A.D. Padmasingh Isaac and is headquartered in Chennai, Tamil Nadu, where it is known for its spice blends. This one is built for rice.

Coriander and cumin lead, with cinnamon, clove, cardamom, bay leaf and black pepper and no chilli, so it perfumes the rice rather than heating it. The grains stay separate and pale, and the heat is left to the curry beside it. Choosing between Aachi rice masalas? Tip: Fry the soaked, drained rice in the ghee and masala until it smells toasty before any stock goes in.
