What it is

Adyar Ananda Bhavan (A2B) was founded by K.S. Thirupathi Raja, who started out making sweets in Rajapalayam, Tamil Nadu. The brand takes its name from its outlet in Adyar, Chennai.

Soan papdi is traditionally made by pulling cooked gram flour and sugar syrup into fine threads and pressing them into cubes. It is flaky and light and melts almost as soon as you bite, and this one has coconut worked through. Choosing between sweets? Soan papdi for light and flaky; Mysore pak for rich and crumbly; Bombay halwa for chewy and glossy.

Tip: Lift each piece out flat with a butter knife. Pinch it and it falls apart in your fingers.
