What it is

Adyar Ananda Bhavan was founded by K.S. Thirupathi Raja, who started out making sweets in Rajapalayam, Tamil Nadu. The A2B name comes from its outlet in Adyar, Chennai, and there are now branches as far as Singapore, Canada and the UK.

Sev is a gram flour dough pressed through a fine plate straight into hot oil, so it comes out as thin, brittle strands. This one has black pepper through it, so the heat is warm and sharp rather than chilli-red. Choosing between A2B savouries? Pepper sev for thin and peppery; mota sev for thicker and crunchier; om podi for the thinnest, with ajwain.

Tip: Scatter a handful over bhel, sundal or a bowl of curd rice just before eating, so it stays crisp.
