Semiya Payasam (Vermicelli milk pudding)

The payasam most South Indian households can make without thinking, and the one most often made badly. The fault is nearly always the same: pale vermicelli.

Roast it in ghee until it goes a shade darker, even if the packet says pre-roasted. That colour is the entire flavour of the dish. Vermicelli tipped straight into milk gives you something sweet and milky and characterless.

The other thing to know is that it thickens a great deal as it cools. Take it off the heat looking thinner than you actually want it, or you will be serving a solid block an hour later.

Vermicelli milk pudding from Pan-South India, made for Ganesh Chaturthi. It thickens a great deal as it cools. Take it off the heat looking thinner than you actually want it.

Directions

  1. Fry the cashews and sultanas in ghee and set them aside.
  2. In the same ghee, roast the vermicelli until a shade darker — do this even if the packet says pre-roasted.
  3. Bring the milk to a boil, add the vermicelli, and simmer on low until soft, about 8 minutes, stirring so it does not catch on the base.
  4. Add the sugar and cook 5 minutes more until slightly thickened.
  5. Finish with the cardamom, saffron and the fried nuts.
