Puran poli is the sweet that Maharashtrian families judge each other on. Chana dal cooked with jaggery into a filling called puran, sealed inside a dough so soft it barely holds together, and rolled thin enough to see through.
There are two rules and both are non-negotiable. The dough rests for two hours under a film of oil, which is what lets it stretch instead of tearing. And the dal must be drained completely before it meets the jaggery, because any water left behind ruins the puran.
You will know the filling is ready when you draw a spoon through it and the line stays open. If it closes behind the spoon, keep cooking.
