Paruppu Payasam (Moong dal and jaggery kheer)

The older, earthier payasam: roasted moong dal cooked soft, sweetened with jaggery rather than sugar, and finished with thick coconut milk instead of dairy.

Coconut milk goes in last and must never boil. Turn the heat to its lowest, pour it in, and take the pan off the moment it steams. Let it come to a boil and it splits, and while it will still taste fine it will never look right again.

A pinch of dry ginger powder at the end is the Kerala and deep-south touch. It stops the whole thing feeling heavy.

Directions

  1. Dry-roast the moong dal until fragrant, then cook it with the water until completely soft.
  2. Melt the jaggery separately, strain it, and add it to the dal. Cook 5 minutes.
  3. Turn the heat to its lowest and pour in the coconut milk, warming it through only. Do not let it boil or it will split.
  4. Add the cardamom and dry ginger.
  5. Top with cashews and coconut slivers fried in ghee.
