Besan Ladoo (Gram flour ladoo)

Besan ladoo is twenty-five minutes of stirring and almost nothing else. There is no technique to learn and no shortcut to find. You melt ghee, add gram flour, and stir on low heat while it goes from pale and pasty to loose, golden and deeply fragrant.

Stop early and it tastes raw, and no amount of sugar hides that. The change is unmistakable when it comes: the mixture slackens and the smell fills the kitchen.

The sugar goes in only once the mixture has cooled to just warm. Add it to a hot pan and it melts, and the ladoo will never hold their shape.

Directions

  1. Melt the ghee in a heavy pan and add the besan.
  2. Roast on low heat, stirring without stopping, for 20 to 25 minutes. It will go from pale and pasty to loose, golden and deeply fragrant. This step cannot be rushed and it cannot be done on high heat.
  3. Take it off the heat and let it cool until only just warm.
  4. Mix in the powdered sugar and cardamom. Never add sugar to a hot mixture or it melts and the ladoo will not hold.
  5. Roll into balls while still warm and press a nut onto each one.
