Rava Kesari (Semolina and saffron sweet)

Kesari is the sweet made when somebody arrives, when something good happens, or when a festival needs one more dish and there is no time left. Twenty-five minutes from a cold pan to the table.

The trick is the water. It must be boiling and it must go into the roasted semolina in a steady stream while you stir hard. Cold water added slowly gives you lumps, every single time, and once they are in you are mashing them out with the back of a spoon.

Expect it to loosen dramatically when the sugar goes in, then thicken again. That is the dish behaving normally. Keep stirring through both stages and add the ghee in the last of it, until the whole mass leaves the sides of the pan.

Semolina and saffron sweet from Pan-South India, made for Ganesh Chaturthi. Boiling water added in a stream is the whole trick. Cold water gives you lumps every single time.

Directions

  1. Fry the cashews and sultanas in ghee and set aside.
  2. Roast the semolina in the remaining ghee on low heat until golden and fragrant.
  3. Bring the water to a boil separately, then pour it into the semolina in a steady stream, stirring hard to keep it lump-free. Cover for 3 minutes.
  4. Add the sugar and the saffron milk. It will loosen dramatically, then thicken again — keep stirring through both stages.
  5. Add the remaining ghee in stages until the mixture leaves the sides of the pan. Finish with cardamom and the fried nuts.
