Tamarind, also called puli (Tamil) · valanpuli (Malayalam) · hunase (Kannada) · chintapandu (Telugu) · imli (Hindi, Punjabi) · chinch (Marathi) · aamli (Gujarati) · tetul (Bengali).
What it is
Tamarind is the sour backbone of South Indian cooking. The ripe pods are shelled, the pulp is pressed into a block, and every kuzhambu, rasam and sambar starts with a small piece of it soaked in hot water.
This is a 200 g block, a handy size for a small household. Soak a lime-sized ball, squeeze out the pulp and strain away the fibre, and you have the sour base for the week's cooking. Choosing between tamarind packs? A small 200 g block like this one for a light cook; Sri Durga seedless tamarind for less straining; Aachi tamarind in 500 g for a big family.
Tip: Soak the next day's tamarind in a steel cup the night before. By morning it squeezes out in seconds.
Goes well with: Sakthi Sambar Powder, Annapoorna Rasam Powder, LG Asafoetida (Hing) Cake
