What it is

Vedaone is made by Atrey Pharmaceuticals Pvt. Ltd., an Ahmedabad-based maker of Ayurvedic, herbal and cosmetic products sold as VEDAONE and MINTAAZ. This pack is karela, the bitter gourd known as pavakkai in Tamil, dried and ground to a powder.

It is pale green-brown and very bitter, and it does not dissolve by itself. Most people whisk half a teaspoon into buttermilk or warm water; a pinch can also go into a pavakkai poriyal to deepen it. Choosing between Vedaone bitter products? Karela powder for a small measured spoon; karela juice for a ready-diluted drink; jamun powder for astringent rather than bitter.

Tip: Whisk it into cold buttermilk with a pinch of salt and roasted cumin. The buttermilk carries the bitterness well.
