What it is
Udhaiyam is made by Udhaiyams Agro Foods, based in Thiruvotriyur, Chennai, which says the Udhaiyam name has been in the market for 85 years. It is better known for its dals, and this is its ponni.
Ponni is the everyday rice of Tamil Nadu, parboiled before milling so it cooks soft, a little sweet and separate. It takes rasam and sambar well without going to mush, and leftovers make good curd rice the next day. Choosing between rice? Ponni boiled for everyday; idli rice for batter; seeraga samba for biryani. The five-kilo bag suits smaller households.
Tip: Rest the rice for five minutes after opening the cooker, then fluff with a fork before serving.
Goes well with: Udhaiyam Toor Dal, 777 Madras Rasam Powder, Udhaiyam Appalam
