What it is

The 777 name comes from the licence number the business was given under India's Fruit Products Order; the family's Madras hotel opened in 1933. Rasam podi is the ground spice for rasam, usually pepper, cumin, coriander, toor dal and red chilli, roasted and powdered.

Rasam is the thin, peppery tamarind soup that comes after sambar on a Tamil plate, and the course most people go back to for seconds. Choosing between powders? Rasam podi for rasam; 777 Madras sambar powder for sambar; 777 pepper rasam paste for a quicker milagu rasam.

Tip: Add the podi just as the rasam starts to froth, and switch off before it boils hard.
