What it is
Tilda was founded in 1972 by Rashmi Thakrar, who came to Britain after Asians were expelled from Uganda, and its basmati is now the top-selling rice in the United Kingdom. The brand says its pure basmati is grown in the Himalayan foothills.
A 2 kg bag suits a smaller household: enough for weekend pulao and the odd biryani, without a big sack taking over the cupboard. The grains are slim and fragrant, and they cook up long and loose. Choosing between rices? Tilda basmati for ghee rice and pulao; seeraga samba for Dindigul biryani; ponni boiled for everyday sambar and rasam.
Tip: For ghee rice, fry the soaked, drained rice in ghee with cardamom and cloves for two minutes before the water goes in.
Goes well with: GRB Pure Ghee, Swaad Green Cardamom, Swaad Cloves Whole
