What it is

Karuppu kavuni kanji is the porridge Tamil homes make from black kavuni rice: the rice is ground, cooked with water until thick, then sweetened with jaggery and finished with coconut milk, or kept savoury with salt and buttermilk.

This mix takes the soaking and grinding out of it. Whisk it into water, simmer, and it turns into a smooth, deep purple porridge with a gentle nutty taste. Choosing between kavuni products? This mix for kanji in five minutes; Shankar's black kavuni rice to cook the grain whole; Manna ragi malt for a thinner drink.

Tip: Whisk the mix into cold water first. Stirred straight into hot water, it lumps.
