What it is

Karuppu kavuni is a black heirloom rice of Tamil Nadu. In Chettinad it is best known as kavuni arisi, the sweet made from it with coconut and sugar and served at weddings and festivals.

The grain is long and nearly black, and it cooks to a deep purple with a chewy bite and a gentle nutty taste. It needs a long soak and a long cook, so plan ahead. Choosing between heritage rices? Karuppu kavuni for sweets and kanji; mappillai samba for a red, heavier everyday rice; Tapovana kavuni kanji mix if you want the kanji without the soaking.

Tip: For the Chettinad sweet, cook it very soft, then stir in grated coconut, sugar and a pinch of cardamom while it is still hot.
