What it is

Nalini Parthiban and Anand Bharadwaj started Sweet Karam Coffee in Chennai in 2015, around the recipes of Janaki Paati. This is their thenkuzhal made small, in bite-size rings, for anyone who wants one without breaking a big coil.

Thenkuzhal is the plain, pale murukku: rice flour and a little urad flour with butter, sesame, ajwain and cumin, and no chilli heat at all. The small size means no breaking and no crumbs on the sofa, mostly. Choosing between murukkus? Thenkuzhal for plain and mild; kai murukku for the hand-twisted festival kind; Andhra murukku if you want chilli and garlic.

Tip: Put a bowl of these out for small children at a function. They are easy to hold and not spicy.
