What it is

Sweet Karam Coffee is the Chennai brand Nalini Parthiban and Anand Bharadwaj set up in 2015, built on Janaki Paati's recipes. Kappa, tapioca, is everyday food in Kerala: boiled and eaten with fish curry, or sliced thin and fried into chips that are sturdier than any potato crisp.

These are fried in rice bran oil and dusted with a masala of onion, chilli, coriander, cumin, pepper, black salt, mango powder and tomato. They are tangy and spicy, and they will colour your fingers. Choosing between kappa chips? Indian Masala for tang and heat, the plain salted-chilli ones for a simpler crunch, jackfruit chips for something different.

Tip: Tip them into a paper bag, add a squeeze of lime and shake. The tang wakes the masala right up.
