What it is

Everest Spices was founded in 1967 by Vadilal Shah and is based in Mumbai, and it makes ground spices and blends. Despite the name, this is not tea. It is the spice mix you add to your own tea: black pepper, dried ginger, cassia bark, green cardamom, cassia leaf, nutmeg, clove and black cardamom.

Pepper and ginger come first, then cardamom and clove. It turns an ordinary cup into the roadside kind. Choosing between tea things? This masala for spiced chai; Tata Chakra Gold or Taj Mahal leaf tea as the base; plain cardamom if you only want elaichi chai.

Tip: Add the pinch to the water with the tea leaves, before the milk. The spices open up in the boil.
