Description
Appa's one kitchen job: clearing the filter holes with a safety pin when they clogged.
- What: Two-chamber South Indian coffee filter
- Size: Home filter, top and bottom chambers with press disc and lid
- Made from: Stainless steel
- Best for: Filter coffee decoction every morning
What it is
Every South Indian kitchen had one of these on the counter. The top chamber has a perforated base; you spoon the coffee powder in, press it lightly with the disc, pour boiling water over it, and the decoction drips slowly into the lower chamber. No paper, no plug, no machine.
It is slow on purpose. The longer drip gives a thick, dark decoction that you mix with hot milk and sugar, then pour between tumbler and dabara until it froths. Choosing between coffees for it? Narasu's Udhayam for a classic chicory blend, Kumbakonam Degree for a strong one, Cothas for a Bangalore roast.
Tip: Pour the water slowly in a circle, not all at once. A fast pour pushes the powder through and clouds the decoction.
Goes well with: Narasu's Udhayam Filter Coffee, Kumbakonam Degree Coffee Premium Blend, Cothas Coffee Speciality Blend
