What it is

Makhana are the popped seeds of the fox nut, a water lily grown in ponds, mostly in Bihar. Roasted, they turn light and crisp, a bit like a puffed grain, and in North Indian homes they go into kheer, into curries and, more and more, into a snack bowl with some seasoning.

This one is seasoned with pudina, so it is cool and green rather than hot. The crunch is soft and airy, and the flavour sits on the outside of each ball. Choosing between Swaad makhana? Pudina for something fresh, Salt & Pepper for plain, Achari or Peri Peri if you want a bit of heat.

Tip: Tip them into a bowl with a handful of roasted peanuts and a squeeze of lemon, and it turns into a proper chakna.
