What it is

Arisi murukku is rice-flour dough pressed through a star mould into spirals and fried. This one is in the Tirunelveli style, made with rice flour and a little urad dal flour, and seasoned with cumin, sesame seeds, salt and asafoetida. Tirunelveli is best known for its halwa; this is the savoury side of a trip home.

It is crisp and brittle, with cumin and sesame coming through rather than chilli. Choosing between murukkus? Tirunelveli arisi for plain and crunchy; Suswaad Butter Murukku for richer; Suswaad Wheat Ribbon Pakoda for a flatter, spicier snap.

Tip: Put these out for anyone who finds other snacks too hot. There is no chilli in the ingredients at all.
