What it is

Nel pori is paddy popped in its husk until it bursts open white. Bound with jaggery syrup and shaped into balls, it becomes nel pori urundai, the sweet traditionally made for Karthigai Deepam and offered at temples. Suswaad's is flavoured with cardamom and dry ginger, which is how most Tamil homes make it.

It is light and airy, and it shatters rather than chews, with a clean jaggery sweetness. Choosing between urundais? Nel pori for light and crisp; Suswaad Aval Pori Urundai for a denser chew; Suswaad Adhirasam if you want the other Karthigai sweet on the plate.
