What it is

Panang karkandu is palm sugar set into amber crystals, made from the sap of the palmyra palm, the same tree that gives karupatti. It comes in small, rough lumps rather than fine sugar, and it dissolves slowly.

The taste is gently sweet, less sharp than white kalkandu, with a faint palm flavour at the end. It is dropped into coffee, crushed into warm milk with a few strands of saffron, or offered as prasadam. Choosing between sweet crystals? Panang karkandu for milk and coffee, white candy sugar for prasadam and pongal, karupatti powder for stirring straight into drinks.

Tip: Crush a few pieces in a mortar before adding to milk. Whole, they take their time.
