What it is

This is karupatti ground fine: the same palmyra sap jaggery as the block, ready to spoon. In the palmyra country of southern Tamil Nadu and northern Sri Lanka, it is what goes into the morning coffee instead of sugar.

It has the same smoky, dark taste as the block but dissolves straight into hot coffee or tea, which the block never really does. Use it spoon for spoon in place of sugar, and reduce the liquid slightly in sweets. Choosing between palm sweeteners? Powder for drinks and quick sweets, the block for grating into paniyaram, palm sugar candy for warm milk.

Tip: If it has clumped, pulse it in the mixie for a second. It has not spoiled.
