What it is

Yellow jaggery is the paler, milder kind of cane jaggery. Ground to a powder like this, it dissolves in seconds, which is why so many kitchens have given up chipping at the block.

The taste is gentler than dark jaggery, so it sweetens without taking over, and it keeps milk sweets and kesari a lighter colour. It is also the one to use for the coconut poornam inside kozhukattai. Choosing between jaggeries? Yellow for coffee, kesari and kozhukattai; brown for payasam and adhirasam; palm sugar candy for dropping into warm milk.

Tip: For poornam, melt it with a splash of water and strain before adding the coconut. There is often a little grit.
