What it is
Kollu is horse gram, a small, flat, brown pulse cooked in Tamil and Kannada homes for a very long time. The English name comes from its old use as feed for horses and cattle. It is one of the hardest pulses in the kitchen, so it always needs a long soak.
Cooked, it is earthy and nutty, with a firm skin that never quite goes soft, and the cooking water turns a deep brown. That water is what kollu rasam is made from. Choosing between pulses? Kollu for earthy rasam and thuvaiyal; kala chana for sundal and a dark masala; toor dal for everyday sambar and paruppu.
Tip: Dry-roast a handful with red chillies, garlic and cumin, then grind with tamarind and salt for kollu thuvaiyal.
Goes well with: 777 Tamarind Paste, Heera Black Pepper Whole, Annapoorna Rasam Powder
