What it is
Marachekku is the old wooden oil press, a heavy pestle turning slowly in a wooden mortar. Pressed this way, gingelly oil comes out without heat, and it keeps the raw, nutty and slightly bitter edge that nallennai is supposed to have.
This is an oil you taste rather than just cook in: mixed into podi, poured into vathal kuzhambu at the end, or drizzled over hot rice. It smells of toasted sesame the moment the bottle opens. Choosing between oils? Marachekku gingelly for kuzhambu, podi and pickles; marachekku groundnut for everyday cooking; Idhayam gingelly for a milder, everyday nallennai.
Tip: Warm a spoonful with a pinch of salt and pour it over idli milagai podi. That is the whole point of this oil.
Goes well with: Suswaad Idli Chilli Powder (Garlic), A2B Vathal Kozhambu Rice Paste, Sri Durga Cold Pressed (Marachekku) Oil - Groundnut
