What it is
Groundnut oil is the everyday oil of Tamil and Andhra kitchens, the one that goes into the pan for tempering sambar, poriyal and kootu. This one is cold pressed in a marachekku, the old wooden press, rather than refined.
That means it looks thicker and more golden than supermarket oil, and it smells of groundnuts as it warms in the kadai. It is richer too, so most people use a little less than they would of refined oil. Choosing between cooking oils? Groundnut for daily cooking and frying, gingelly for kuzhambu and podi, coconut for Kerala dishes.
Tip: Heat it until a curry leaf crackles on contact before frying vadai. Too cool and they soak up the oil.
Goes well with: Heera Black Mustard Seeds, Heera Curry Leaves, Udhaiyam Urid Dal / Gota
