What it is

Badam pisin is a natural gum sold as hard, amber crystals. Dry, it looks like broken glass. Soaked overnight in water, it swells many times over into a soft, clear jelly with almost no taste of its own.

That jelly is what gives Madurai jigarthanda and summer sarbaths their slippery texture, and it picks up the colour and flavour of whatever it is stirred into. A little goes a long way: half a teaspoon of crystals is enough for a glass or two. Choosing between drink add-ins? Badam pisin for the soft jelly, nannari sarbath for the rooty, sweet syrup, rose sarbath for colour and scent.

Tip: Soak it in a wide bowl, not a small cup. It grows far more than you expect.
