What it is

Sowbaghya started in Chennai in 1978 and is best known for its wet grinders. The company says it was the first wet grinder maker in India to receive ISO 9001 certification from TUV Germany.

The paniyarakkal is the pan with round hollows that turns leftover idli batter into kuzhi paniyaram: crisp outside, soft inside. The same pan makes sweet appam with jaggery and banana for Karthigai. This is the mini one, with seven rounds, handy for a small household. Choosing a pan? Mini paniyarakkal for two people; regular with 12 rounds for a family; appakadai for Kerala appam.

Tip: Add a few drops of oil to each hollow before the batter, and again when you turn them.
