Description
Description
Sunday appam, the pan tipped in one slow circle, and stew waiting on the next burner.
- What: Non-stick appa kadai (appachatti) with lid
- Size: One appam at a time
- Made from: Non-stick coated pan, stainless steel lid
- Best for: Appam with lacy edges and a soft centre
What it is
Sowbaghya was founded in Chennai in 1978 and makes wet grinders and cookware. It says it was the first wet grinder company in India to receive ISO 9001 certification from TUV Germany.
An appa kadai is deeper and rounder than a tawa. The batter goes in, you lift and swirl the pan once so it climbs the sides, then the lid goes on so the centre steams soft while the edges crisp. The listing also suggests it for neyyappam. Choosing a pan? Appa kadai for appam; the Sowbaghya paniyarakkal for kuzhi paniyaram; a cast iron tawa for dosai.
Tip: Keep the flame at medium. Non-stick does not like high heat, and appam cooks better slowly under the lid.
Goes well with: Sowbaghya Paniyarakkal (12 Rounds), Sri Annam Thanjavur Ponni Raw Rice, Heera Desiccated Coconut Fine
