What it is

Sohum Udyog, at Khed Shivapur near Pune, is known for chakki-fresh atta from Lokwan wheat, and bhajani is its Maharashtrian speciality. Bhajani means a blend of grains and dal, each roasted, then ground together.

This one is for thalipith: jowar, bajra, wheat, rice and chana dal with coriander, cumin and salt. Mixed with onion and green chilli, it is patted out by hand, a hole pressed in the centre, and cooked with oil around the edge until crisp. Choosing between bhajanis? Thalipith for the everyday savoury flatbread; upwas bhajani for fasting days; chakali bhajani for Diwali chakli.

Tip: Pat it out on a wet plastic sheet or banana leaf, then flip it straight onto the tawa.
