What it is

Sohum products are made by Sohum Udyog in Khed Shivapur, near Pune, a company founded by the late Smt. Sushila Gargate. It is known for chakki-fresh atta and traditional Maharashtrian foods.

Amboli is the Malvani breakfast pancake: thick, soft and full of holes, somewhere between a dosai and an appam. It is cooked on one side under a lid and never spread thin. Here the rice, urad and a little fenugreek are already blended, so you only add water and wait. Choosing between batters? Amboli for thick and spongy; a regular dosa mix for thin and crisp; thalipith bhajani for a flatbread.

Tip: In an Irish winter, ferment it in the oven with only the light on. It rises by morning.
