What it is

SMS appalams and vadams are made by Shree Mahalakshmi Stores in Chennai. Vadam is the summer-made fryer of Tamil kitchens: rice batter, here with onion, traditionally squeezed into small shapes and dried until brittle, then kept in tins through the year.
