What it is

SMS appalams and vadams are made by Shree Mahalakshmi Stores in Chennai, Tamil Nadu. Maracheeni is the Tamil word for tapioca, or kappa as Kerala calls it.

Tapioca appalams puff up much more than urad ones and turn light and airy, so they shatter at the first bite. The flavour is mild, which leaves room for the sambar or rasam they are served with. Choosing between appalams? Maracheeni for big, airy and light; a regular urad appalam for thinner and crisper; onion vadam for something with more taste of its own.

Tip: Fry in a wide kadai. These puff to almost twice their size and need the room.
