Description
A kalyanam biryani so good that the cooks were asked which rice, and nobody would say.
- What: Seeraga samba rice, the small-grain biryani rice
- Pack: 1 kg
- Brand: Shree Krishna
- Best for: Dindigul and Ambur-style biryani, ghee rice
Seeraga Samba rice, also called seeraga samba arisi (Tamil).
What it is
Seeraga samba is a Tamil Nadu rice with tiny, rounded grains that look a lot like cumin seeds, which is where the name comes from. It is the rice behind Dindigul and Ambur biryani, and most Tamil wedding biryani too.
It has its own light fragrance and soaks up masala and ghee instead of staying separate from them, so every grain tastes of the pot. It cooks quicker than basmati and needs less water. Choosing between biryani rice? Seeraga samba for Tamil-style biryani; basmati for long, separate grains in Hyderabadi or Lucknowi biryani; ponni for everyday meals.
Tip: Fry the washed, drained rice in a spoon of ghee for a minute before the water goes in. The grains stay separate.
Goes well with: Cookd - Dindigul Biryani Paste, GRB Pure Ghee, Shan Fried Onion
