What it is

A short, almost cumin-sized grain, which is where the name comes from. It takes more water than basmati and a little more patience, and it comes out as separate grains that carry the masala instead of sitting beside it, which is the whole reason it is used.

This is the grain a Tamil biryani is judged on, and the 10 kg sack is the size the shops and the caterers buy. Choosing between our rices? Seeraga samba for biryani, Ponni boiled for everyday sambar and rasam rice, and basmati where you want long grains and a lighter pulav.

Tip: Soak 20 minutes, then 1 part rice to 2.5 parts water. Treating it like basmati is how it ends up mushy.
