What it is

Rice that keeps its bran flecks instead of being milled white, so the grain looks uneven in the bag. It behaves differently in the pot: more water, a few minutes longer, and a firmer bite at the end.

The taste is nuttier and the texture coarser than mill-white rice, which some people take a week to get used to and then will not go back from. Choosing between the traditional rices? Hand pound where you want the coarser bite, thuyamalli for a soft small grain, and seeraga samba when it is biryani.

Tip: Add half a cup more water than you would for white rice and give it five extra minutes. Underdone hand pound rice is chalky.
