What it is

Mappillai samba means 'bridegroom's samba'. It is one of the old Tamil rice varieties, a deep red grain that village families kept growing long after white ponni took over, and the name comes with a wedding story that every elder seems to tell differently.

It cooks up red-brown and chewy, with a nutty taste, and it never goes soft like sona masoori. It needs a long soak and a few more whistles than white rice. Choosing between traditional rice? Mappillai samba for chewy red rice with kuzhambu; karunkuruvai for a darker grain; karuppu kavuni for the black rice of sweet kanji.

Tip: Soak it the night before. It cuts the cooking time and the grains cook through evenly.
