- What: Kara kuzhambu paste, tamarind and chilli
- Pack: 300 g jar
- Brand: 777, Madras roots going back to 1933
- Best for: Hot rice, kuzhambu with vegetables or vathal
What it is
777 grew out of Hotel Sri Rama Bhavan, which brothers R.S. Narayanasamy Iyer and R.S. Ganapathy Iyer opened in Madras in 1933. Kara kuzhambu is the hot, tamarind-dark gravy of Tamil home cooking, made without dal and eaten with plain rice and something crisp and fried on the side.
The paste works two ways: stirred straight through rice, or thinned with water and simmered into a proper kuzhambu with drumstick, brinjal or shallots. Choosing between rice pastes? Kara kuzhambu for heat, vathal kuzhambu for sour and bitter-edged, puliyodharai for tamarind rice.
Tip: Fry a handful of shallots in gingelly oil, add the paste and a cup of water, and simmer five minutes.
Goes well with: Idhayam Gingelly (Sesame) Oil, 777 Appalam No 1, Heera Ponni Boiled Rice
