What it is
Shan Foods started in Karachi in 1981, founded by Sikandar Sultan as a small home-based business. Karachi is in Sindh, and the company is known for packaged spice and recipe mixes for South Asian dishes.
Sindhi biryani is the tangy, hot one. Alongside the meat it takes potato, tomato, yogurt and dried plums, so every layer is a little sour. This mix leans on coriander and red chilli, with cumin, pepper, black cardamom, ajwain, bay leaf and caraway. Choosing between Shan biryani mixes? Sindhi for tangy and hot; Bombay for layered with potato and milder; the standard biryani masala for a classic spice-led pot.
Tip: Halve the potatoes and fry them golden before layering, so they hold their shape through the dum.
Goes well with: Daawat Original Basmati Rice, Shan Fried Onion, Shan Garam Masala
