What it is

Daawat basmati comes from LT Foods, a family business founded by Raghunath Arora in the Amritsar basmati-growing belt of Punjab. The ingredients list says simply basmati rice, nothing else added.

It cooks long and separate, with the familiar basmati smell, and takes ghee and whole spices well without going sticky. Five kilos suits a house where pulao or biryani comes round a few times a month. Choosing between rice? Basmati for pulao and North Indian biryani, seeraga samba for Tamil-style biryani, golden sella for grains that hold up to long dum.

Tip: For jeera rice, fry the soaked, drained rice in ghee for a minute before the water goes in. The grains stay separate.
