What it is
Shan Foods was founded in 1981 by Sikandar Sultan in Karachi, Pakistan, and started as a small home-based business. It is known for packaged spice and recipe mixes for South Asian dishes. This paste is 53% ginger and 34% garlic, with salt, rice bran oil, turmeric and a little acid to keep it.
It saves the peeling and grinding on days you cook in bulk. It goes in after the onions, and you fry it until the raw smell goes before the tomatoes follow. Choosing between? Shan Ginger Garlic for everyday curries; Shan Ginger Paste or Shan Garlic Paste when a dish wants just one; Heera Ginger Garlic Puree for a smaller jar.
Tip: Spoon what you will not use soon into an ice cube tray and freeze. One cube is about right for a curry.
Goes well with: Shan Fried Onion, Sakthi Chicken Masala, 777 Chettinad Mutton Masala
