What it is

Sakthi Masala has been given India's National Award for Quality Products three times, in 1994, 2005 and 2012, and makes over fifty spice and masala powders from Erode in Tamil Nadu.

The pack lists Bengal gram dal, lemon salt, red chilli flakes, compounded asafoetida, mustard, turmeric and salt, so the sourness comes from lemon salt rather than fresh juice. Two tablespoons to a cup of rice. Choosing between the rice mixes? Lemon rice powder for sharp and quick, puliyodharai for deep tamarind sourness, tomato rice paste when you want it gentler.

Tip: Squeeze fresh lemon over it at the end anyway. The powder gives the base, the juice gives the smell.
