What it is

Sakthi Masala is based in Erode, Tamil Nadu, and was started in 1977 by Dr P.C. Duraisamy as a small turmeric trading business. Sakthi Masala Private Limited was formed in 1997 and makes more than 50 spice and masala powders.

This is the ready batter powder for tea-time bajji: add water, dip thin slices of raw banana, onion or potato, and fry. Thicker batter wraps round a spoon of potato masala for bonda. No measuring besan and rice flour, no guessing the chilli. Choosing between mixes? Sakthi for a Tamil tea-kadai bajji; GRB Bajji Bonda Mix for another Tamil kitchen's version; Aashirvaad besan if you like to mix your own.

Tip: Slice the plantain lengthwise and thin, about the thickness of a coin. Thick slices stay raw inside.
