What it is

Star anise, badian in Hindi and annachi poo in Tamil, is the dried star-shaped fruit of an evergreen tree, and a fixture in biryani and South Indian meat masalas. It is also one of the whole spices ground into many garam masala blends, and a single star often goes into chai.

It is sweet and liquorice-like, and strong: one whole star is enough for a pot of biryani for six. Choosing between whole spices? Star anise for sweet depth; Heera Cloves for heat and bite; Heera Bay Leaves for a gentler background.

Tip: Grind one star with the other whole spices for a chettinad masala, never more. Too much and the dish tastes of liquorice.
