What it is
Heera is the main brand of P&B (Foods) Ltd, a Bradford-based company that describes itself as one of the largest independent wholesale distributors of Asian foods across Britain and Europe. This small pack is its dried bay leaves.
In Tamil kitchens it is brinji or biryani ilai, and in the North tej patta. A leaf or two goes into hot oil or ghee at the start, alongside cinnamon and cloves, and gives the pot a warm, woody smell. The leaf itself is not eaten. Choosing whole spices for biryani? Bay leaf for the base, cinnamon and cloves for warmth, black cardamom when you want smoke.
Tip: Tear the leaf once before it goes in the oil. It releases faster, and it is still easy to find and lift out.
Goes well with: Heera Cinnamon Sticks, Heera Cloves, Daawat Original Basmati
