What it is
Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products. These noodles are made with samai, little millet, a tiny grain grown in the hills of Tamil Nadu and the Deccan.
They are fine and quick to cook, lighter in colour than the ragi or kambu noodles, and they hold a sauce or a thin broth well. Choosing between Native Food Store millet noodles? Samai for fine and light; multi millet for an all-rounder; ragi for dark and firm.
Tip: For soup, add the dry noodles to the simmering pot for the last three minutes only. They keep cooking in the bowl.
Goes well with: 777 Pepper Rasam Paste, Heera Curry Leaves, Shan Ginger Garlic Paste
