What it is
Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products. Kambu is pearl millet, bajra in the North, the grey grain of dry villages, and this pack has it as flakes for the aval tin.
They are darker and nuttier than rice poha, with a firmer bite that stands up to a spicy tempering. Choosing between Native Food Store millet flakes? Kambu for earthy and nutty; ragi for darkest; thinai for the mildest.
Tip: For a sweet version, mix the rinsed flakes with grated coconut, jaggery powder and a pinch of cardamom.
Goes well with: Native Food Store Jaggery Powder (Country Sugar), Heera Desiccated Coconut Fine, Swaad Green Cardamom
